I feel very clever. Especially as it worked. It was TASTY.
Instead of just covering the soup with some bread and blu cheese, I made (again, FROM SCRATCH) basil, capsicum and feta cheese scolls for the top.
The scolls....did not work as well as the soup. I am not a baker. Dough and I are not on a first name basis. We're on a more "formal name with stilted conversation" basis. If any of you had seen my kitchen during the battle between myself and the dough who would have called Ripley's.
The scolls still tasted divine, but a wee bit doughy. So, putting it on top of the French Onion soup worked a real treat.
